When beef shin is cooked long and slow, the gristle and tough tissue turns into jelly giving it the wonderful rich beef flavour typical of a traditional African beef stew.
Beef shin comes from the foreshank of the animal and, due to the the vast amount of work the muscle does, is full of connective tissues which makes the meat tough before it is stewed.
